Joz would throw open the door and dust the welcome mat off if these chips(crisps) were on offer I'm sure. They became a must have while trawling the bars of Edinburgh recently. Have become a bit of an interested taster of Haggis, perhaps @evil c or the puller of pork @Tubularbells could bring some round to chez Joz. It's not the horror it's made out to be. I never had and I swore I'd never try until I was instructed about it's proper preparation and cooking and indeed presentation by a friendly guide in a fantastic institution in Edinburgh. It ends up having a loose sausage style consistency and when you knock back a couple of wee drams before hand and then listen to the proper introduction(I/we did) it becomes a real ritual and we were surprised at just how tasty it actually is. So once we had some single malt in our glasses our guide intoned: Some hae meat and canna eat, And some wad eat that want it, But we hae meat and we can eat, And sae the Lord be thankit. The haggis's arrived in front of us with some mashed spud and a few singular veg but before we could start we had to listen to the 'Address to a Haggis' by Robbie Burns. Fair fa' your honest, sonsie face, Great chieftain o' the pudding-race! Aboon them a' ye tak your place, Painch, tripe, or thairm : Weel are ye wordy o'a grace As lang's my arm. The groaning trencher there ye fill, Your hurdies like a distant hill, Your pin wad help to mend a mill In time o'need, While thro' your pores the dews distil Like amber bead. His knife see rustic Labour dight, An' cut you up wi' ready sleight, Trenching your gushing entrails bright, Like ony ditch; And then, O what a glorious sight, Warm-reekin', rich!
