  1. Do explore what you ears preferred as much as possible. As @buddyev has mentioned (and I do concur with the man - has great taste in music ) you do need an gutsy amp to drive the B&W 8 series.   2. 2.1 yeah, not many amps with that feature. Parasound integrated as @att23 has mentioned. As long as the amp has pre-out you should be good to go. Eg. Hegel 390 or 590. The other integrated amp with sub outs that I can think of is the rather pricey Gryphon Diablo 300.
