Im confused about what size Valve Amp a person should be looking at to drive my modest Epos M-15 rated Power Handling 25 - 100 Watts Max.

Gav it depends on your speaker's sensitivity and impedance.
If they are 8 ohm and better than 89dB 50 watts is plenty.

I'm running my Austral's on a pair of 50 watt Shanling monoblocs, no drama's.

Gav, most valve amps have a 4 ohm and 8 ohm tap on their output transformers. I suspect the 4 ohm tap would work ok on 6 ohm speakers. I suggest you try it out first though.
If your thinking of buying a valve amp, see if the dealer will let you take it home for a trial first.
